SAMPLING MENU
Envisioned by Executive Chef Willy Beaudry and the international culinary team, the sampling menu features a variety of fresh and delectable seafood. On the menu, you'll find Prince Rupert seafood chowder; Arctic surf clams; smoked butterfish; shrimp; local cod sustainably caught by local Prince Rupert fisherpersons; a West Coast plate of cold smoked lox with dill and horseradish cream; West Coast tuna with ponzu-orange, sesame, scallions; and fresh halibut from Hecate Strait with lemon-caper sauce; all samplings paired with wine or beer. For dessert, you'll enjoy a mini crème brûlée with maple-infused syrup, whipped cream, and berries in season.
