Put on your walking shoes and bring your appetite for a taste of Livorno's culinary culture. Your journey begins when you step off the bus near the Old Fortress and follow your local guide to the Old Medici port, past the fishermen's marble stalls to the local Fish Market for a look at the daily fish auction and how fish is selected for local recipes. Fish is the main ingredient in a stew called "cacciucco." Sample its succulent flavors along with a fish sandwich and a glass of wine aboard a typical fishing boat. Satiated, you'll walk along the Via Grande to the Outdoor Market, which dates back to the 1600s and on to Il Frataio Restaurant for a "bombolone," a sweet treat filled with chocolate or custard cream. Your gastronomic adventure ends at a typical cantina on the canals for wine and typical appetizers
